BlueCity asks chefs from restaurants in Rotterdam to join Het Nieuwe Nassen: a program in which practical tools are provided to make the menu of the restaurants sustainable, healthy and future-proof. Under the guidance of Greendish, we measure in Het Nieuwe Nassen Challenge how things stand in terms of sustainability and health and we take care of one dish. A second group of entrepreneurs started in May 2022. In this interview with chef Manuela Goncalves Tavares from Het Nieuwe Café, she talks about her Het Nieuwe Nassen experience.
